This is the recipe that won first place in the May 2009 COC - Extract beers.

Batch size: 4.0 gallons
5.0 lb. Briess Pils DME
1.0 lb. Beet Sugar
5.6 HBU Styrian Golding pellets 60 minutes
Wyeast 1388 Belgian Strong Ale Activator

OG: 1.065
IBU: 20
SRM: 3.5

Did another batch of this at the October brew day. I used the Briess Pale DME instead of the Pils DME this time, and also made my own invert sugar. I used the White Labs Bastogne yeast this time also. It is still fermenting. I don't know what it is, but I've had to do extended fermentations on all the Belgians I've done so far. I'm using big starters too. The Saison is the worst. It fermented for 2 months, but it is very tasty. I don't think it will make it to Thanksgiving.

All grain version brewed at Jimmy's brew day November 2008. This beer scored 42 in 2009 Bluebonnet second round, and did not place. It took a second in the 2009 Lunar Rendezbrew. It was pretty popular at the 2009 NTHBA summer party.

Batch size: 5 gallons
11.0 lb Dingman's Belgian Pils
1.0 lb Dingman's Biscuit malt
0.5 lb Weyerman Acidulated malt
1.0 lb Beet Sugar
2.5 oz Vanguard 3.8% 60 minutes
0.5 oz Vanguard 3.8% 30 minutes
0.5 oz Vanguard 3.8% knockout
10 gallons Antwerp water
2000 ml starter with WYeast 1388 Activator
Mash rests 130F, 154F, 168F, infusion step mash in 10 gallon cooler.
OG = 1.074
IBU = 28.0
SRM = 6.3
