I was reading "Beer Captured" today and came across this calculation for IBUs. A little different than the one we looked at Sunday. I tried it out. It agrees with the software.

IBU = ((oz. of hops) x (%alpha acid) x (% utilization)) / ((gals of wort) x (1.34))
They use these numbers for utilization 60 min-25% ; 30 min-15%; 5 min-5%

2 oz. of 5%AA hops for 60 minutes in 6 gals of wort

2 x 5 x 25 / 6 x 1.34 = 250/8.04 = 31.1

You could make it even easier by just deciding on a standard wort volume and using that number for the divisor.
6 gals - 8 (round off 8.04)
5.5 gals - 7.4 (7.37)
5 gals - 6.7
