I want to brew a small batch perry for my wife. she won't drink 5 gals, so I was going to do a gallon batch..
I've got 1 gal of organic pear nectar as a base... I want it carbonated somewhat.. so champagne yeast.. what else? do I need to add anything to feed the yeastie beasties during fermentation?
oh, I'd like it to be somewhat dry
