First of all the ciders kits at Homebrew Headquarters are easy to use and make great cider. However, for the same reasons I do all-grain beers I am trying to make cider from pressed apple juice.
The OG of the 2 gals. of juice was 1.056. It is now down to 1.004 after a month. Now I am trying to decide how to flavor it.
I would like to keep it apple cider. One option is to add some apple juice or apple concentrate.
What about adding some brown sugar?
Would adding the sugar make it a Specialty cider?
