EvilFrog in my limited and self righteous opinion 3068 is a rockstar of a yeast. The esters of clove or banana has more to do with the pitch. EvilFrog I have had this happen to me in a less than controlled fashion. The beer was drinkable but less than prime time. EvilFrog how close would the Tinkerweizen be to a Berliner Weisse? The sour mash makes me think it's more lactic acid tart.

Nice work on the fitting. I would like to see the fermentation system in action. I suppose this will ferment 10 gallons with proper headspace so no blowoff is needed.

Okay I am in.
This could go in many directions of with hops. I am thinking Hallertau\Saaz with Trappist yeast. Depending on the OG some additional sugar to dry it. Should make a nice standard issue Belgian.

Bill, I did the double mash thing and really liked the process. Seemed like the best way to brew for exact gravity. What gravity are you shooting for with the Olde Ale?
