Re: Using Raw Wheat
heck, skip the protein rest altogether. You are talking about a Wit, right? A little protein haze might not hurt.

Re: Using Raw Wheat
Billy, since the torrified and flaked wheat are already gelatinized they can be easier to use. Say for instance you want to do a protein rest. It might be better to gelatinize the raw wheat before adding it to the mash to do the protein rest. That way all the proteins are available to the protease e...

Re: Ozarka Natural Spring Water
I wouldn't suspect the Ozarka Natural Spring Water as the source of any extra bitterness. Their water analysis is wonderful. If I had tap water like that I'd use it all the time. I use RO water to brew, because it's less expensive. I top up the fermenters with Ozarka Natural Spring Water also. Their...

Re: Shiner Smokehaus
It's one of them love it or hate it beers. I've heard many say it sucks. I find it strange that they like any smoked beer at all then. To me it is a light smoke character, especially when compared with Aecht Schlenkerla Rauchbier Marzen, and even Stone Smoked Porter. The Schlenkerla Marzen is, hands...

Re: Barnyard
The aroma we were thinking we were smelling is called "enteric." It's not a desirable aroma, but at low levels it is acceptable in a lambic. Of course, we weren't sure that is what we smelled. We just thought it might be.

Re: Stir Plates and Flasks
Bill, That would be AWSOME! The motor turns, but it also sticks. I think it is supposed to have some sort of braking system to keep it from spinning too fast when not under load. Maybe that is why it sticks. I figured I'd be able to just replace the motor, but finding one that fits might be a little...

Re: Class Discussion - Question #2 (Water)
Okay, I've said it in the past. Water is my weak subject. I think I may have some of the Carbonate/Bicarbonate stuff confused. Calcium Sulfate (CaSO4): Also known as Gypsum, increases the Calcium and Sulfate content of the water. Is good for English Ales, because the Sulfate will enhance hop bittern...

Re: 2010 BJCP Study Group
Okay everyone, I think t is best if we all understand the material before the class. Please read the Style guidelines and the portion of the study guide in advance. You might sample some of the sub-styles before the class while you are reading them. This can help you a lot. See you Sunday. Cheers.

Re: Brewers Association Releases 2009 Top 50 Breweries Lists
I'm so confused Okay, they have another list or poll that they publish. I guess I confused it with that. That one is the one I was talking about. I'll have to find it, because the results are not very good.

Re: 2010 BJCP Study Group
It's not too late. We had 1 class so far, and there are 10 more planned. We may squeeze in one somewhere along the way. The $100 fee is to cover all the commercial beer we will buy for tasting. Anything left over will be either returned or used to benefit all class members. We discussed an option la...

Maybe a golf umbrella too?
It sounds a lot like last year. We didn't get very wet. It sprinkled some.

Brewers Association Releases 2009 Top 50 Breweries Lists
Okay, the subject says it all -- OR DOES IT? How do you feel about the list? It's one of those polls that really doesn't work. Did you vote? Why not? Spoetzl is above Deschutes, Harpoon, Alaskan, Bells, Boulevard, and many more. Is that acceptable? Spoetzl is number 4 out of 50! I wish I was joking....
