Bring them to the brewday on 1/21. There will be several experienced folks to give you feedback on your beer. You can also see other all-grain brewers and their techniques. I've brewed a bunch on mine and Orlando's system and there is 0 reason to control your mash with a float switch. It isn't any more effort to batch sparge vs using a pump. I have done both and won awards with both. (though a lot more with Orlando, I am almost certain that is because of dedication vs ...

No reason to sanitize the hops. I've never met a pro that does that on any scale. The equipment that you use to hold the hops sure but after that don't worry.

1.008 here and it tastes good. Might be a touch bitter but a little time will fix that. Plus it was flat and in the fermenter. Time to keg it up this weekend.

I used a blend of yeasts. I used the dry wheat yeast and a platinum strain French Saison yeast. It is going strong today. I figured why not try something different.
