Re: Ok, let's talk about Wheat Bier
Donnie- Your question about doughing in at 144 got me wondering. So I've been trying to find my sources on line and I can't. The closest I can find is from Braukaiser's discussion of gelatinization...and I'm pretty sure I misread or misunderstood that article. I could also swear Palmer's recipe's al...

Re: Ok, let's talk about Wheat Bier
Roller mill: Old, 2 roller variety...has no settings, but is adjustable. You just can't tell from crush to crush what the setting was. Also, the rollersw don't appear to be exactly parallel. I need Santa to fix this issue... I always dough in at 140-144, per Palmer (I think...now you make me wonder)...

Re: Ok, let's talk about Wheat Bier
OK, so I brewed the Dunkelweizen today. I think I need some instruction with ProMash (or just simple math...), cause I'm having trouble hitting the OG's, lately. Today I reversed my recent trend of going too high by getting 1.052 (target was 1.056). The mash seemed to go fine, doughed in at 144 for ...

Re: Ok, let's talk about Wheat Bier
That's great feedback, Bill, I do appreciate it. Given that I don't have some of the malts you suggest, and I'm not in the mood to drive across town for a few pounds of malt, I'll probably just cut the caramunich and carafa in half this time. Then, next time I make one (Jan/Feb), I'll use the dark w...

Re: Ok, let's talk about Wheat Bier
Thanks Bill. Funny thing, the recipe I have (and used years ago, last time I made a Dunkelweizen) is very similar to this one. I seriously doubt that's a coincidence...must have found it on the web some years ago. But...there ARE some differences that I think are minor...and I'd like some opinions b...

Re: Ok, let's talk about Wheat Bier
Hey Bill. I need your help. Santa is bringing me Jamil's book for Christmas, but she's being a hard ass and won't let me look at his Dunkel Weizen recipe until 12/25. What kinda Christmas spirit is THAT? I plan to make a dunkel weizen this weekend, and am no longer satisfied with my recipe. Anyway, ...

Re: January meeting place poll
Yes, the BJ's in Lewisville does have an enclosed patio area to the left as you walk in. They use it for restaraunt seating, so I don't know if they'd be willing to dedicate it to us, but it's worth asking, if anyone other than me and Cody want a Lewisville meeting, that is. If not, we'll just have ...

Re: January meeting place poll
No, BJ's has no meeting room, unless it's really well hidden. Big Buck's (or whatever it's called now...) is just a couple miles up 121 from BJ's!

Re: marking a glass carboy
Like Cameron, I have all my carboys marked with thin strips of duct tape at 1 through 5 gallons. Been on them for nearly 2 years. I also have a fermometer on each carboy. Now those don't seem to last as long as duct tape (ok, what DOES?), but I can't imagine fermenting without one. It's really the o...

Re: Bizarre oxidation results
Sorry I missed this exchange at the party...I was interested in what others thought, and in how the beer tasted. But I'm not surprised you got some helpful feedback. We have some really talented, knowledgable, and time generous brewers in this club.

Re: Bitter and chalky Christmas Ale
Hey Dave. I've never had a chalky flavor in my beers, thank goodness, but I think it's WAY too soon for you to start worrying. With a holiday stout (presumably relatively high gravity) and spices to boot, I would recommend you let it sit in the primary for at least 3 weeks, then age it another coupl...

Re: January meeting place poll
I think you're right...would anyone be interested in trying Big Buck's Brewery in Grapevine? It's an enourmous building, so they may have space. I've not tried their beers in a long time, but they used to have some reasonably good ones. If there IS any interest, I'd be glad to contact them regarding...

Re: January meeting place poll
For purely selfish reasons, I'd sure like you to hold a meeting in the Lewisville area...maybe BJ's. I'd like to attend the meetings but it's just too much driving for me (on top of 1.5 hours going to and from work...).
You guys put on a good party last night. Enjoyed it.

Re: Boulder Beer
Twisted Pine is on Walnut Street, just east of 28th street, in a small warehouse. Great atmosphere (lots of dogs!) and beers! All 20 of them! The one we did not like is the Draft House. Naturally, it was next door to our hotel...on 13th Street. Another which was our second least favorite was The Bou...
