Re: To Grit or Not to Grit

Nice picture Bill. The corn grits CAP had 2C on the bottle cap label (it was underlined). Basically, the grits were boiled with a charge of malt for 70 minutes. About 20 minutes before the end of the grits boil, the main mash was doughed in at 95F. I think the mash schedule was 95, 128, 148, 160. Th...

Re: Brew stand

Nice thread guys. Dave, practice your welding on some scrap for a few tries before going straight to the system. Believe me, my dad was a nuclear certified welder, but that doesn't mean it is easy. I've tried, and I can do a poor to fair job. As long as your angles are good, you can grind down the g...

Re: New Bar in Uptown

Heard they had the Bear Republic Racer X Double IPA on tap a month or so ago. They're online bar menu is awesome. They could be some real competition to the Gingerman.

Re: Where can I buy Lion Stout from Sri Lanka?

I think this beer used to be available in the 90's. If not, it was another "Island" foreign style stout. Now the two that are available are Coopers, and Ridgeway. Neither is an island-style though, which tend to be much sweeter.

Re: Yuengling clone recipes

Guys, here is a quote from the Yuengling web site. Since 1829, D.G. Yuengling & Son, Inc. of Pottsville, Pennsylvania has produced a complete line of fine brewed products to satisfy the most discerning tastes of beer connoisseurs. For over 175 years each recipe has called for both American six r...

Re: AHA 2011 Regional Judging

Alrighty then! Imagine a perfect world where Bluebonnet meetings don't get scheduled for the same day and time as BJCP classes. I would hope we can get this sorted out since our club is leading the BBO this year. I plan to be BBO head/helper steward. Melinda knows. Mike should also know. I think the...

Re: Oak chips/cubes

Using liquor will flavor the beer, whether you drain the oak or not. It then becomes a "specialty beer" and not a "wood aged beer". There's been recent debate about wood. I've read in HBD that oak chips/cubes that have been steamed/boiled should be drained, and the liquid should ...

Re: July 10th Brew Day at Bill's

SWEET! FYI, there is a water & ice store next to the Albertson's near Brian&Melinda's and Water&Pam's homes too. They have both micro filtered and RO water, and the ice is made using micro filtered water. The prices are extremely good. I forget exactly how much, but I think the ice was $...

Re: AHA 2011 Regional Judging

We can give the NHC Regionals better quality judging than what we've been seeing from Colorado. That's what I like to hear. There are so many so called "hop heads" that think a hoppy Pilsner is fruity with no hop aroma or hop flavor that it makes me furious! ED: Perhaps they should stick ...

Re: AHA 2011 Regional Judging

The BJCP seems to have some information to help organizers and judges in a AHA Regional type competition. You can find it at the BJCP site; see Queued Judging. Also under Reference material, see How to Judge Beer.

Re: AHA 2011 Regional Judging

The time frame is right after the Bluebonnet, and before the Celtic. Timing is dreadful. Enough of my pessimism. This would be really good for all the area clubs and judges. We have the opportunity to hone our skills and show the rest of the BJCP membership, AHA, and world just how good we really ar...

BJCP Exam Results

It's officially been 5 months since we took the February 6 exam and the results are still not in. Hopefully they will come in before Iron Mash! I think this means we could expect a 6 month turnaround on the November 13 exam, which puts the results out into May 2011. Our original thinking was to get ...

Re: Yuengling clone recipes

Anyone have clone recipes for Yuengling's Lord Chesterfield Ale, porter and premium? I take it your neighbor is from PA. I am also, but I don't find those beers wonderful. Although Yuengling enjoys Craft Brewery status, their beers are much less than Craft Brewery quality. Personally, I think their...

Re: Using Raw Wheat

I'm no expert, but I think if you definitely want a haze and aren't counting on the yeast to provide it (especially when you plan to use a lager yeast), so you could definitely skip the protein rest. Also, even using a cereal mash with unmalted wheat berries doesn't need to be given a protein rest. ...
