I will be doing a batch of Bochet (burnt / camalized) mead at the event.
I will be starting it later in the day on Saturday for those who are interested in watching and or helping with the process.

Re: BurningBeer 2012!!!!
Hello, The burn ban information for the county is here: http://www.co.collin.tx.us/fire_marshal/burn_ban.jsp It went into effect July 30th and runs for 90 days. I don't know if they will extend the burn ban. I'm sure they will announce any extension on the collin county website: We can NOT have a bo...

Re: BurningBeer 2012!!!!
Could use another person for the site setup / planning. I've made some progress on the property. I have a working water spigot near the camp area, and will be putting a second 20 amp breaker and plug on the pole to provide more power for lighting. The road will be going in over the next few days and...

Re: Collaboration BigBatch #5: Oak Barrel Project: This Satu
Barrett, Do you have enough kegs to ferment? I can ferment one of the 4 batches and could supply a sankey keg. I believe the plan is you will walk away with 5 gallons of beer in your supplied keg or carboy and dispense or bottle as you desire. I'm sure that a bottling session could work if we get en...

Re: Collaboration BigBatch #5: Oak Barrel Project: This Satu
Barrett, Can you detail how you plan to ferment? Do you have a temperature controlled environment for the primary? Here is the Equipment List. Brewmaster provides Propane, water, water additions, Mill, scale and ingrediants. It only takes me an hour to prep the equipment before hand. I will deliver ...

Re: BIG50 Batch #4
Jason,
I thought we did not have a club brew day scheduled until Sept.
I'm going to be busy the next few days.... taking care of limbo beer and getting entries bottled etc.
What were you thinking of brewing and do you have enough people lined up to take 9 shares of beer?
Wayne.

Re: Joe's Ancient Orange Mead
Depends on the mead. If it is not carbonated you can use wine bottles.rack04 wrote:How is mead typically bottled?
Beer bottles will work with all styles and is a reasonable amount to serve.

Re: Joe's Ancient Orange Mead
It works fine for Joe's. I prefer the version made with raw wildflower honey, but it was not worlds better compared to batches made with store bought honey.rack04 wrote:I'm thinking about experimenting with mead making. Any tips on honey? Is the stuff at Wal-Mart of Sams good enough for this recipe?

Re: BIG50 Batch #4
Brew day went very well. Thanks David for being the brewmaster for our big rig brew #4 My portion will not be a Kolsch. I decided to pitch 3711 French Saison yeast. I picked up a fresh smack pack and it was puffed up almost before I got home so we shall see how it goes. What did you pitch on your sh...

Re: BIG50 Batch #4
I will be bring the rig to the next brewday. David Lee will be brewing a kolsch and will be in charge of running the brewday etc. Look for RSVP instructions. Most likely this will be done on our Meetup page. 55 gallon kettle so 45 gallon batch is probably the largest realistic size so we have to som...

Re: Gulden Draak carbonation
I would not redose. Any temp in mid 70s or greater should work.
From your description i would personally wait.
If you want to drink it sooner i would use a carbonator cap with aa 2 liter bottle to force carb individual bottles one at a time and serve while the rest carbs up over time.

Re: Gulden Draak carbonation
I attempted to clone the strong belgian Gulden Draak. I had an OG of 1.096. I used 1388 strong belgian and a yeast cake of 3711 Saison. I wanted it to be somewhat dry so I drove the attenuation hard starting at 70 F and ending at 80 F. My attenuation was 89%. so far so good. This resulted in a 11.5...

Bill,
Decoction on the big rig would be fun. Nothing different other than the scale.
I have a 20 gallon kettle we can decoct in off to the side.

Re: BIG50 Batch #4
Bill, I'm up for another stab at a fest beer. I like helles and marzens in general. I think this is one of the harder beers to do very well..... at least that is my personal experience brewing them. There is no reason we can't do both the extract and ocktoberfest on the rig the same day other than g...
