Bill beat me to it but I always add honey to the mix 2-3 days after pitching yeast. Its good for yeast health also as they will eat the simple sugar of the honey before the sugars extracted from the malt. I have read of many a recipe where the yeast eats the honey and never makes it all the way thro...

Count me in, we aren't winning left and right but we have a couple medals to our name this year and hope to pick up another couple at Dixie. We will def be entering most every comp next year and hope the rest of the club will do the same.

Oh, and I am planning to come help check in beers on the 3rd, so I will bring my entries there.

I also was going to volunteer to help steward the event if that is still needed, but I am not sure where to sign up.

Based on taste I really don't think anyone would say it was over 1050. It isn't against the spirit of the comp or considered "cheating" if I enter it knowing it started over 1050? The goal was 1050 haha.

I'll be entering 3. I really really wanted to enter a 4th, but the Schwarzbier had to high of an OG, we were aiming right at 1.050, and somehow we hit nearly 1.060, not going to break the rules.

Thanks Bill, the Oktoberfest is fermenting away, I'll be upping the temp here in a couple days for a diacetyl rest then going to the lager chamber. I will see about adding the melanodin malt next time, hopefully this turns out well, the decoction mash was a headache, it sure took forever, but I can ...
