So far so good. Started at 1.057 on the 18th, it's down to 1.015 today, sitting at 90 degrees. I'm wondering if I should just let it go slowly, or throw in Wyeast 3711. I still have not added the 1 pound of cane sugar. Any suggestions?

Saison questions

This will be my first attempt at a Saison. The recipe calls for 1 pound of cane sugar, but doesn't say when to add it. After reading some, I think I should be adding it to the fermenter after fermentation has been going for a few days so the yeast don't eat the simple sugars first and then get tired...

If were using the chiller plates, then yes, we will need to put the kegs on ice in your cooler.

Ok, we have at least two Jockey Boxes lined up. We need a table to sit these on, and possibly something to hold the kegs with some ice. We may be able to get away with the kegs sitting at room temperature. But that depends on the coil lengths of these Jockey Boxes.

Who has jockey boxes that we can use? At this rate, if we have 16 kegs, we will need at least four extra taps. So two jockey boxes with two taps will work. I have a igloo cooler that holds a keg with ice perfectly. I have a small Co2 tank and tap handle for that if needed.

I have a scuba tank that has been sitting collecting dust for years. Can I get this filled with pure O2 and use it to aerate my wort? If so, where can I get this filled in the Carrollton area?
